You are right... It is better choose a hungry market first, then find something that provides a solution or fulfills a want or need for that market.
Unless you really understand marketing, it can be a mistake choosing an opportunity based on the product. Just because there is a large market and a great product doesn't mean you will be successful. You still need to understand how to market the product effectively.
To ensure your success, I recomend you find the most successful mentor / team you can find that has proven systems you can plug into. Anything else is VERY risky if you are a newbie.
Also, find out how your potential mentor is building their business. If they are using old-school networking and contacting friends and family, that is INSANE. It is very difficult to become successful this way.
Personally, I think anyone that joins a mentor that is not a savvy marketer, is making a big mistake.
